Any figure we published here would be ours, taken on our data, under conditions you did not set. Below is what gets measured instead, and what it gets measured against. Read it as the specification for an experiment rather than as a result.

The awkward part
Your baseline probably does not exist yet
Most underwriting teams have never timed submission handling, and nobody has measured their own extraction accuracy against a ground truth, because until recently there was nothing to compare it to. Establishing the baseline is therefore the first week of the work, not a prerequisite for starting.
It is also the part people find uncomfortable, since it produces a number about the current process that did not exist before. That number belongs to you. It goes in the report whether or not it flatters anyone.

Put the method to the test
A Proof of Value is fixed in scope and agreed in writing before it starts. If the measurement described above would not convince you, the time to say so is now rather than at the end of it.
